    About Executive Chef Manuel Honrado

    Executive Chef, Manuel Honrado was born in the Dominican Republic, and moved to the United States at age eleven. Like many professional chefs, Manuel's passion for food was fostered during his childhood, working with his family. Manuel's grandmother served as chief cook at the American Embassy, and his mother and father grew fresh vegetables in the garden. Even as a young boy, Manuel embraced the importance of fresh ingredients and local seasonal foods, and continues to be inspired by his early time in the Dominican Republic.

    Upon deciding to continue his culinary interests on a professional level, Manuel attended the New York Restaurant School with concentrations in culinary arts and restaurant management. His comprehensive education has allowed Manuel to oversee essential operations within a restaurant, from menu development to staff selection, ensuring the highest quality on all levels.

    Shortly after graduation in 2004, Manuel joined Thalia on the cooking line. His talents were apparent, and Manuel quickly rose to Sous-Chef. After four years at that position, Manuel was selected from a prestigious pool of applicants to serve as Executive Chef for Thalia, and has been at the helm of Thalia's sophisticated operation since.

    Manuel has an amazing ability to prepare meat and fish, tailoring new dishes to compliment each variety. He works closely with owners and fisherman, who call him several times a week with fresh offerings of meat, fish, and produce. Manuel takes great care in dish preparation, researching interesting new accompaniments, and spending hours cleaning and filleting in the kitchen. When he needs to get away from the bustle of Manhattan, Manuel feeds his passion for the sea by fishing off the coast of Cape Cod.

    Thalia strives to remain a leading restaurant in the vibrant New York City theatre district, and a destination for locals and visitors alike. Manuel strengthens this mission, through innovative and creative menus during Lunch, Brunch, Dinner, and before and after the theatre. Thalia offers comprehensive prix-fixe dinner and lunch options, catering and events, delivery in midtown, as well as Thalia Kitchen, the popular take-out branch.
